Sometimes Friday, and all that entails,
seems especially far away on a rainy Wednesday.
I found myself looking for glimmers of weekend hope
in some of my favorite blogs and,
my mood immediately brightened.
These warm weather cocktail recipes are now in my “hydration queue”
and I strongly encourage you to add them to yours!
Bubbles, Mules, Mojitos.. we’ve got them all.
Sit back, sip up and enjoy!

2 oz vodka
1/2 oz lime juice
4 oz cardamom ginger ale
lime wheel and pinch of ground cardamom for garnish
Champagne or prosecco
St. Germain liqueur
A handful of mint

1 bottle white wine (chardonnay, pinot grigio, sauvignon blanc, or similar)
1/3 cup peach schnapps
1/4 cup sugar, or to taste (or stevia, agave, or another sweetener)
3/4 cup mango chunks, frozen (you could use fresh but save money and buy frozen, plus they act as “ice cubes”)
3/4 cup pineapple chunks, canned
1/3 cup pineapple juice (use whatever is in the can)

makes 1 mojito, but is easily quadrupled
6-8 fresh mint leaves
2 1/2 ounces of mint simple syrup
1 ounce of rum
1 1/2 ounces of club soda
2 ounces of mixed berry juice
the juice of one lime
fresh strawberries, blueberries and raspberries

a few sprigs fresh mint
15ml (1/2 oz) sweetened pomegranate molasses
30ml (1 oz) vodka (or double shot if you like a stronger drink)
¼ cup cooled chai tea from one tea bag steeped in boiling water (I used Planet Organic Chai Spice)
one small bottle ginger beer (I used Bundaberg)
pomegranate seeds to garnish
